Coronation Chicken (for 4-6)

10 fl oz mayonnaise
1 tbsp tomato puree
1 tbsp curry paste (madras)
1 tbsp lemon juice
1 tbsp mango chutney or apricot jam
1 tsp paprika
Chopped spring onion
1 cold chicken or 4 cooked chicken breasts

Mix all the sauce ingredients and set aside.
Cube the chicken.
Add sauce to chicken and put in fridge.

This simple recipe is especially suitable if accompanied by tasty salad,
 eg fennel and orange, waldorf, mixed green, etc.
Or you could try adding diced apple and/or chopped almonds to the sauce ingredients.
