Maryvic's Flapjack

Ingredients
55gm demerara sugar (could use white caster)
55gm white caster sugar
100gm syrup
100gm butter
small handful of chopped dates
150gm oats
85gm wholemeal flour (could use plain)

Extras - all optional but desirable
chopped apricots
dried cranberries
dried blueberries
walnuts
toasted almonds
toasted pumpkin seeds
toasted sunflower seeds
etc
(all these should be 'a few of each', to taste)



 
Maryvic's Flapjack

Method
1. 
Heat oven to 180C/fan160C/gas4.  Heat sugar, syrup, butter and chopped dates in a pan until the dates are soft and everything else has melted and is frothing. Stir the frothing mixture for about 3 mins. Remove from the heat.

2.  Add oats, flour, nuts, seeds, etc (all the remaining ingredients). Pour into a non-stick tin approx 20cm x 16cm and press down lightly.

3.  Bake for about 14-15 mins until slightly brown, then check at short intervals, to achieve a result that you like

4.  Allow to cool in the tin, then turn out while still warm and cut into pieces to desired size.
